I've been to the albino postman in Van Horn many times. I've never heard him say anything about himself Didn't hear about the gold or ghost either. Never heard the drunk talking about Princess IKZ either. Didn't even know the Fence guy actually mentions her either.
It seems like in this series he's leaving out the completely cut stuff, like the water monster. - likely a robotic Nessie The Van Horn Stagecoach driver has voice lines about it in the files not heard in the game

Again, I think this is all CGI, not real stop-motion LEGO, but hilarious that he included the Cougar from that in-game video of the Cougar in this cutscene
(which I think was manually spawned in because I don't think the cougar outside Beecher's Hope follows you inside the property.)
